The story of Rå Sjømat began when Tore, as a young chef, tried Bottarga from Italy for the first time. A colleague who shared his interest of great produce, returned home from holiday, bringing back this beautiful product. The taste was like nothing Tore had ever experienced before and a thought crept into his mind. Could it be possible to make this from Norwegian Skrei as well?
During the following years he experimented with different recipes and flavours, before, finally, he came up with the product that we sell today. Tore grew up in a small farm in the Northwest of Norway; he spent long days fishing, foraging and cooking with his family. With a genuine interest in food, he started working in kitchens at age 15 and has spent almost twenty years in various kitchens, both in Norway and abroad. Along the way he met Kjærsti and they got married. She shared his passion for great produce, exciting flavours and sustainable living. With roots in a fishing community in the North of Norway, she also had a family history of people living by the sea. Together they created a vision and the dream was impossible to escape.
Honouring their history, it was important to them to walk in the footsteps of their families. Their firstborn gave them further motivation to go ahead with their dream. With great help from Tore’s dad, Jon, a retired farmer and mechanic, the trio created a product that is high quality, environmentally friendly and sustainable.
